Five Pea Recipes

Here in the Catalan Garden we love to eat seasonal produce, but one thing we do buy for much of the year as an additional bonus freezer retrievable vegetable are peas.  So even though its not seasonal, but mostly because I was asked – here are five ways with peas…

  • Peas & Lettuce Recipe

Saute shredded lettuce in butter, throw in some crushed garlic if you like and then add your peas.  Add a corner of a good veg / chicken stock cube and a few tablespoons of water (or better still a few spoons of light home-made stock).  Stick a lid on and simmer for 10 minutes.  Lovely!

  • Spring Time Pasta with Peas Recipe

Fry off garlic and sliced onion in some good olive oil.  Add spring time veggies (broad beans, peas, sprouting broccoli).  Once cooked to your liking add some grated cheese (cheddar or gouda is good) plus a ladle or two of water the pasta is boiling in to give yourself a sauce.  Mix it all up with some thin pasta and off you go – quick easy springy pasta!

  • Serrano and Pea Recipe

Warm some bite-sized bits of serrano ham in butter / olive oil for a few minutes then add peas and a few spoons of stock/water.  Simmer with a lid for 5-10 minutes.

  • Pea & Pork Leftover Soup Recipe

For using up left over ham bones, bacon, spare ribs or anything else flavoursome and piggy!  Simmer your designated left over pork product in plenty of water with some stock herbs & veg (carrot, celery, onion, bay) for about 45 mins.  Skim off anything dodgy that arises for the first 10 mins or so.

Add lots of peas, cover and simmer for 30 mins or so.  Take the piggy stuff out then split the mixture in half.  Blend half then put it back together adding any meat you can shred from your pork scraps.

  • The Best Fresh Pea Recipe

My favorite.  You cannot get better than wandering round the garden picking peas and eating peas just as they are.  If you want to get fancy make a salad with the raw peas, a lemon/oil vinaigrette and lots of mint and pepper.  If you don’t want to get fancy, just eat them.  When they’re young eat the whole lot, pods and all!
